Kadhu ka Kheer/ Laukhi Kheer/ Bottle gourd Kheer.

Ingredients:

1. Lauki/Bottle Gourd- 1 medium size

2. Full fat milk- 500ml

3. Sweetened Condensed milk- 50 to 60 ml

4. Ghee- 3tps

5. Sugar- 5tps

6. Dry fruits(Cashews, Almonds, Pistachios, Pecans)- Each 5

7. Cardamom- 5pcs

8. Ground Pistachio Powder- 1/2 tps


Preparation Method:

1. Fry the chopped dry fruits with 1tps of ghee and keep aside. Grate bottle gourd finely and pan fry in the rest of the ghee until the water evaporates from bottle gourd and ghee oozes out. Let it cool down to room temperature.

2. Simultaneously, boil the full fat milk, after 5-6 mins add sugar and boil till the sugar dissolves in milk.

3. Add the bottle gourd mixture to the milk and desired amount of condensed milk and stir it continuously to avoid burning at the bottom. Condensed milk can be added more or lessen according to your taste.

4. After 5 mins add the cardamom powder and half the count of dry fruits and mix to the kheer and let it cook to 2 mins.

5. Switch off the flame and garnish with rest of the dry fruits and grounded pistachio powder.
