Carrot Beans Coconut Fry

Ingredients:
1. Carrots- 1 cup
2. Green Beans- 1 cup
3. Fresh coconut- 1 cup
4. Green Chillies- 3
5. Turmeric- pinch
6. Salt- to taste
7. Oil- 1 spoon
8. Mustard seeds- 1 tbsp
9. Cumin seeds- 1 tbsp
10. Coriander powder- 1 tbsp
Preparation Method:
1. Chop carrots and beans in equal quantity.
2. Grind fresh coconut adding green chillies and salt required for coconut.
3. Heat oil in a pan, add mustard seeds, cumin seeds, turmeric, and chopped veggies. Saute well for 5-6 minutes. Close the lid and cook for few more minutes.
4. Add little salt which is sufficient to carrot and beans mix well.
5. Add the coconut mixture, mix all together, finally add coriander powder and cook for 2 minutes. Turn of the flame to avoid coconut burning. Sevre hot with Steamed rice and ghee.
