Tofu Bell pepper curry- Roti

Ingredients:

1. Tofu- 400 grams

2. Bell pepper- 1

3. Onion-1

4. Tomatoes- 2

5. Cashews- 30 grams

6. Oil- 1 spoon

7. Ghee- 1/2 spoon

8. Turmeric - pinch

9.Ginger garlic paste- 1 tbsp

10. Salt- to taste

11. Chilli powder- 1 tbsp

12. Curry masala- 1 tbsp



Preparation Method:

1. Chop the tofu, bell pepper, onion into cubes.

2. In a pan add oil. ghee. Add g-g paste, onions. Fry till onions are translucent and raw flavor is absorbed. Add turmeric and give a mix.

3. Add bell peppers and saute for a while. Close the lid on and cook till soft. Don't overcook bell pepper.

4. Make a smooth tomato puree and add it to the curry mixture. Cook the puree and vegetables on a medium flame.

5. Dry roast the cashews and make thick paste. Add to the curry and give a good mix. Cashew paste makes the gravy thick and flavorful.

6. Add salt, chilli powder and give a good mix. After 2 minutes add curry masala, tofu cubes and mix properly. Cook on a low flame to avoid cracking of tofu.
