
Jeera Rice
Ingredients
1. Basmati rice-2 cups
2. Onion- 1 medium sized
3. Green chillies- 3
4. Oil- 1 spoon
5. Cumin seeds- 1 tbsp
6. Ginger garlic paste- 1 tbsp
7. Cashews- 50gms
8. Water-3 1/2 cups
9. Salt- to taste
10. Ghee- 1 tbsp
Preparation Method:
1. Wash and soak basmati rice for 30 minutes. Take a kadai add 1 spoon of oil and add cumin seeds, sliced onions, green chillies, ginger-garlic paste and fry till onions and g-g paste turns golden brown. Add Cashews and fry for a while.
2. Add 31/2 cups of water, salt to taste and let the water heat for 2-3 minutes.
3. Now add soaked basmati rice and mix gently, close the lid and cook until the water evaporates and check the rice, if you still feel the rice is not cooked properly add little water and close the lid, cook for a while.
4. Add ghee, mix well and serve hot. This Jeera Rice is simple and goes well with ay spicy curry.
Paneer Butter Masala
Ingredients
1. Paneer- 200 gms
2. Onion- 1
3. Ginger-garlic paste- 1 tbsp
4. Desi Tomatoes- 2
5. butter- 2 spoons
6. Dry fruits( cashews, almonds, pecan)- 50 gms
7. Turmeric- pinch
8. Salt- to taste
9. Chilli powder- 1 tbsp
10. Curry masala- 1 tbsp
Preparation Method:
1. Heat butter in a non-stick kadai, add g-g paste, blend onion to smooth puree,cook till the raw flavor is evaporated from onion puree and g-g paste.
2. Add tomato puree and turmeric, mix well and close the lid. Let it cook in low flame so it blends perfectly with butter.
3. Soak dry fruits for 10-15 mins. Blend into a smooth paste and add to the gravy. Add salt, chilli powder mix well for a while.
4. Add curry masala mix once and add diced paneer. Mix gently close the lid and cook till the butter separates from gravy. Delicious paneer butter masala is ready to serve with any flavored rice or roti/chapati/naan etc. Or you can go with the combination as in picture.
