Lemon Rice/ Lemon Pulihora

Ingredients:

1. Rice- 2 cups

2. Water- 4 cups

3. Lemon- 2

4. Oil- 1 spoon

5. Peanuts- handful

6. Green chillies- 3

7. Red chillies- 2

8. Cashews- handful

9. Mustard seeds- 1 tsp

10. Cumin seeds- 1 tsp

11. Urad dal- 1 tsp

13. Turmeric- 1/2 tsp

14. Asafoetida- 1/2 tsp

15. Salt- to taste


Preparation Method:

1. Wash and cook 2 cups of rice. Let it cool down.

2. Squeeze out juice from lemons. It is an approximate measurement depending on the sourness and quantity of lemon juice.

3. In a steel pan, heat 1/2 tsp oil, fry peanuts to golden brown take out only peanuts, in the same oil add cashews and repeat the step.

4. Add remaining oil add mustard seeds, cumin seeds, urad dal, turmeric, asafoetida, green chillies, red chillies fry crispy.

5. In a mixing bowl, add cooked rice, salt to taste, lemon juice, peanuts, cashews, tadka. Mix everything properly. Yummy lemon rice is ready to serve. It is a good dish for lunch box, picnic potlucks, tours.
