
Ingredients:
1. Raw Mango- 1
2. Rice- 2 cups
3. Oil- 2 spoons
4. Mustard seeds- 1 tbsp
5. Cumin seeds- 1 tbsp
6. Urad dal- 1 tbsp
7. Turmeric-pinch
8. Asafoetida- pinch
9. Green Chillies- 3
10. Red Chillies- 2
11. Peanuts- Fistful
12. Curry leaves- 1 string
13. Water- 3 1/2 cups
Preparation Method:
1. Soak 2 cups of rice for an hour , steam the rice. Take it out to a mixing bowl and keep aside for cool down.
2. Peel the mango, grate the mango thick at least to an inch ( don't grate too thin). Add 1 spoon of oil in a non stick pan fry the grated mango pulp till the raw flavor is gone.(Do not burn the mango, try to fry in a medium flame). After a minute take the mango pulp without oil into a mixing bowl.
3. Add 1/2 spoon of oil and roast the raw peanuts till crunchy. Take out the peanuts into the same mixing bowl without oil.
4. Add the remaining oil into the pan add mustard seeds as they start splattering add cumin seeds, urad dal. asafoetida, turmeric, green chillies, red chillies, curry leaves fry for a minutes. Turn off the flame.
5. Now add salt, tadka to the mixing bowl. Mix well all the ingredients with the help of spatula and if required with hand. It turns out to yummy, mouth watering, seasonal mango rice.
