
Ingredients:
1. Poha- 200 grams
2. Oil- 1 spoon
3. Mustard seeds- 1 Tbsp
4. Cumin seeds- 1 Tbsp
5. Turmeric- pinch
6. Green Chillies- 2-3
7. Peanuts- 3 Tbsp
8. Carrot, green beans,potato, sweet corn, green peas- each vegetable of 1 spoon
9. Onion- 1 medium size
10. Mint leaves- handful
11. Tomat0-1
12. Lemon juice- 1 tbsp
13. Salt- to taste
Preparation Method:
1. Heat oil in a thick base kadai, add mustard seeds, cumin seeds, turmeric, green chillies, mint leaves, and fry for a minute. Add peanuts and roast in the oil for 1-2 minutes.
2. Add chopped onions and fry till translucent, now add all the chopped vegetables including green peas and sweet corn. Mix well and close the lid. After a minute saute once, add finely chopped tomato and cook them well.
3. Now add salt to taste, meanwhile immerse poha in a bowl of water for a minute, squeeze out the complete water add to the cooked vegetables gently. Make sure the flame t0 be low. Mix well, close the lid and cook for 2-3minutes.
4. Finally add lemon juice, stir from bottom to top. Serve hot with any pickle. It goes well with sweet & sour mango pickle.
