Methi Chaman Biryani

Ingredients:

1. Basmati rice-3 cups

2. Water- 5 cups

3. Bay leaf-2

4. cinnamon stick-1

5. cardamom- 3

6. Onion- 1

7. Methi- 1 bunch

8. Green chillies-3

9. Sweet corn- 1 cup

10. Garam Masala- 1/2 tbsp

11. Curd- 1 cup

12. Paneer- 400 grams

13. Salt- to taste

14. Chilli powder- 1 tsp

15. Biryani masala- 1 tps

16. Butter- 2 spoons

17. Ghee- 1 tsp

18. Saffron- 4 strands



Preparation Method:

1. Wash and soak basmati rice for an hour. Add a spoonful butter in a pot. Add bay leaf, cinnamon stick, cardamom. Saute for a minute add basmati rice, water, salt, saffron. Cook the rice 3/4th keep aside.

2. Dice paneer into cubes. Add curd in a bowl, salt, chilli powder, garam masala and paneer. Marinate 1 hour.

3. Take a non-stick pan add butter and ghee. Add onions saute well till translucent. Add methi leaves, green chillies and cook till raw flavor is gone. Add sweet corn, salt, chilli powder, biryani masala and mix well. Cook for 2-3 minutes.

4. Finally add layers in a bowl. Bottom of the bowl add rice, methi curry , marinated paneer, repeat another layer and cook the remaining part. Mix well and serve hot with raita.
