Navaratan Kurma

Ingredients:

1. Carrot-1

2. Green Beans- a bunch

3. Potato-1

4. Green Peas- 1/4 cup

5. Zucchini-1

6. Green bell pepper- 1

7. Cauliflower- 1/2 cup

8. Tomato-2

9. Onion -1

10. Ginger garlic paste- 1tbsp

11. Mint- 10 strands

12. Butter- 1/2 tsp

13. Oil- 1 spoon

14. Salt- to taste

15. Chilli powder- 1 tbsp

16. Curry Masala- 1 tbsp

17. Cashews- 40 grams

18. Cilantro- handful




Preparation Method:

1. Chop carrots, beans, potato, zucchini, bell pepper, cauliflower. Saute all the chopped vegetables and peas in a non-stick pan for 3-5 minutes.

2. Heat a kadai add butter and oil, meanwhile make onion paste. Add onion paste, gg paste and cook well till raw flavor is gone.

3. Make tomato puree and cook well. Add mint and saute well for 2 minutes.

4. Add all the vegetables to the onion tomato pure mix well cook for a while adding water.

5. Add salt to taste, chilli powder and cook for 1 more minute.

6. Make cashew paste, add to the curry and curry masala cook for 2 minutes.

7. Finally add cilantro and mix well.
