
Ingredients:
1. Toor dal- 1 cup
(9 vegetables of choice)
2. Carrot-1
3. Green beans- 10 count
4. Green Bell pepper- 1
5. Indian squash/ opu- 1/2 medium sized
6. Drumstick- 2
7. Cranberries- 10 to 15
8. Tomato- 1
9. SweetCorn- 1/4 cup
10. Onion- 1
11. Oil- 3 tbsp
12. Mustard seeds- 1 tbsp
13. Cumin seeds-1 tbsp
14. Turmeric- 1/4 tbsp
15. Asafoetida-1/4 tbsp
16. Methi powder- pinch
17. Red chilies- 1
18. Curry leaves- 1string
19. Green chillies-2
20. Ginger garlic paste- 1 tbsp
21. Salt- to taste
22. Red chilli powder- 1 tbsp
23. Sambar powder- 1 tbsp
24. Coriander leaves- handful
25. Water-4 cups
Preparation Method:
1. Cook 1 cup of toor dal with 2 cups water for 5 whistles in a pressure cooker separately.
2. Take a non-stick kadai heat the oil and add mustard seeds, cumin seeds, turmeric, methi powder, asafoetida, red chillies, curry leaves and saute for 10-20 seconds.
3. Add onions, green chillies, ginger garlic paste and saute till golden brown.
4. Add all other vegetables including tomato. Saute all the vegetables and cook for 5 minutes to soften the veggies.
5. Add 1 cup water and cook for 1 minute. Add the cooked dal and mix well. Now add salt, chilli powder and mix well. Cook it for 5-6 minutes.
6. Mix sambar powder in 1 cup of water separately and add to the cooked sambar. To avoid lumps. Cook for 2 more minutes.
7. Switch of the flame and add handful of coriander leaves and mix once. Serve hot with (rice/idli/dosa) with ghee and papad. It taste heavenly with steamed rice and ghee.
Note:
1. This sambar doesn't require tamarind pulp. Cranberries and tomato gives enough sourness and different taste.
2. Preparing with the included vegetables results unique taste and can feel special from routine sambar.
3. can replace yellow cucumber, zucchini, okra instead of Cranberries, Opu, Green beans. These options are just my ideas. You can even follow as i used to make it unique style navratan sambar.
