
Ingredients:
1. Long grain rice-3 cups
2. Urad dal- 1 cup
3. Chana dal- 1 tbsp
4. Sago- 1 tbsp
5. Spinach- 1/2 bunch
6. Green Chillies- 4
7. Ginger- 1 inch piece
8. Cumin seeds- 1 tbsp
9. Salt- to taste
10. Butter/ghee/oil- to roast dosa
Preparation Method:
1. Rinse thoroughly & soak 3 cups long grain rice, urad dal, chana dal, sago for 4-6 hours.
Grind all together as a thick dosa batter.
2. Rest the batter for 8 hours to ferment. After fermentation add salt to taste and mix properly.
3. Blend spinach, green chillies, ginger to puree and add to the dosa batter. Depending on the spice levels you can add or reduce the amount of chillies. Add cumin seeds.
4. Mix and pour a ladle of batter to a hot dosa pan and add 1 tbsp of butter to roast it. You
can add ghee or oil of your choice. Adding butter make more yummy on spinach dosa.
5. Serve hot with Methi chutney and Ginger chutney. You can even have with peanut or coconut chutney and sambar.
