Tamarind Rice

Ingredients:

1. Rice- 2 cups

2. water- 4 cups

3. Tamarind pulp- 1/2 cup

4. Salt- to taste

5. Peanuts- 1/2 cup

6. Green chillies- 3

7. Oil- 2 spoons

8. Mustard seeds- 1 tsp

9. Cumin seeds- 1 tsp

10. Urad dal- 1 tsp

11. Red chilli-1

12. Curry leaves- 1 string

13. Asafoetida- pinch

14. Turmeric-pinch



Preparation Method:

1. Wash and cook 2 cups of rice. Let it cool down.

2. Wash tamarind and soak for an hour. Squeeze out the pulp. Cook the pulp to thicken like a sauce.

3. In a steel pan, heat 1 spoon oil, fry peanuts to golden brown take out only peanuts.

4. Add remaining oil add mustard seeds, cumin seeds, urad dal, turmeric, asafoetida, green chillies, red chillies fry crispy.

5. In a mixing bowl, add cooked rice, salt to taste, tamarind pulp, peanuts,, tadka. Mix everything properly. Yummy tamarind rice is ready to serve. It is a good dish for lunch box, picnic potlucks, tours.
