Vegetable achar

Ingredients

1. Carrots- 1 cup

2. Cauliflower- 1 cup

3. Green beans- 1 cup

4. Oil- 1 spoon

5. Turmeric powder- pinch

6. Salt- to taste

7. Red chilli powder- 1 tbsp

8. Jeera powder- 1/2 tbsp

9. Coriander powder- 1/2 tbsp

10. Lemon juice- 1 spoonful


Preparation Method:

1. Chop all the vegetables into equal size. Heat oil in a steel pan, add all the vegetables and stir fry for 2 minutes. Cook them in a low flame closing the lid. Do not add water or turn flame high to avoid burning.

2. Add salt and mix properly, close lid and cook till the vegetables are soft and texture should remain same.

3. Add chilli powder, jeera powder, coriander powder, lemon juice and cook for a minute.

4. Serve hot with parathas, rice.
