Vegetable Semiya Upma

Ingredients:

1. Semiya- 2 cups

2. Water- 4 cups

3. Potato-1

4. Carrot-1

5. Beans- bunch

6. Onion-1

7. Sweet corn- 1/4 cup

8. Tomato- 1

9. Peanuts- 1 spoon

10. Oil- 2 spoons

11. Mustard seeds- 1 tbsp

12. Cumin seeds- 1 tbsp

13. Red Chillies- 2

14. Green Chillies- 2

15. Curry leaves- 1 string

16. Salt- to taste


Preparation Method:

1. Heat oil in a kadai, add mustard seeds, cumin seeds, red chillies, green chillies, curry leaves and saute for a minute.

2. Add peanuts, fry for a while. Add onions and fry till translucent.

3. Add all chopped vegetables including sweet corn, tomato and saute for 2-3 minutes.

4. Meanwhile dry roast semiya and keep aside.

5. Add water and salt to taste into the vegetables kadai. Cook till all the vegetables turn soft.

6. Now add the roasted semiya and mix well. Cook till all the water is absorbed. Vegetable semiya is ready to serve.
